In my perpetual quest to find extra income I often take on odd jobs. Generally speaking, this means babysitting, housesitting and dogsitting. (what can I say? I’m excellent at sitting on things.)
This week the odd job of choice is dogsitting.
Ok, not for that dog (that’s Max, my sister’s dog). Imagine Max blonde and slightly smaller and living across the street (she’s my sister’s neighbor). Bingo!
It was a long day at work today, but I got to join my mom and sister for a nice dinner.
Shrimp Scampi with Quinoa, Simple Salad and Carrot Salad
This was the same carrot salad from Bastille Day except I didn’t grate the carrots. Too much effort for tonight. 🙂
The scampi was a standard recipe (nothing crazy or inventive this time) of garlic, white wine, lemon juice and parsley.
Like my dad always says, “if it’s not broke, don’t fix it.”
The quinoa was just cooked simply and went really well with the garlicy sauce.
To get rid of the bitter aftertaste that quinoa can have, rinse it before you cook it. It also soaks up sauce really well, so putting your meat/veggies on top can add a lot of flavor!
It was a nice summer meal, and not too heavy. And having the company of family that I love always makes it taste that much better!
