Pina Colada Smoothies

When it comes to having a good, solid, summery weekend I do just fine.

I own a grill and know how to use it.

I live 1/2 a mile from a beach and half that far from two separate frozen yogurt establishments.

I wear my sunglasses. Sometimes even at night.

This weekend, though…this weekend, something special happened.

That, my friends, is happiness in a glass.

Or mug, or blender pitcher. Whatever gets this to your face the fastest.

Simple Pina Colada Smoothie
makes 3-4 drinks

1 cup vanilla ice cream
3/4 cup coconut rum (such as Malibu)
1 cup pineapple juice
7-8 ice cubes

Blend all ingredients until smooth. You can adjust the amount of rum to suit your preferences.

This is bad news for my waistline and the new bathing suit I just bought.

But you know what? A few pounds of fun chub are worth it when it tastes like a mariachi band is playing on a Mexican beach at sunset on your tongue.

Or something less creepy and specific.

Maybe I should switch to water.

  2. Reminds me of tropical liquors- a frozen drink bar I was fortunate enough to have a roommate work at for a year of college. I gained 3 pounds that summer. Mostly from their “toasted almond”. There was ice cream and kahlua involved.

  3. I have been craving pina coladas lately. The problem is they’re so good I drink the whole thing in 10 seconds and then feel pukey the rest of the night. I bet I’d drink this one in like, 2 seconds. And then I would die. But it would be a good way to go.

  4. Actually, this is really a healthy drink- ice cream=dairy; coconut=healthy fat (even if it was derived and put into rum; we’ll just ignore that part); pineapple= fruit; ice cubes= hydration…friggin’ fantastic, yo!
