Apparently my favorite peanut butter is being recalled.
Technically, no one has gotten sick from the exact product that I buy…they’ve just expanded the recall to include all peanut products made by this manufacturer…and I’m already 2/3 finished with my jar…so….
My point is that I went to the store and bought a DIFFERENT kind of peanut butter after work today because I clearly can’t go 24 hours without it. A hassle, but worth it.
And also, since we’re talking about peanut butter (and when am I not?), I have a new brown bag lunch idea for you.
Last week I made a full box of pasta because clearly my eyes are way bigger than my stomach (they are also bigger than my casserole dishes), so I had some left over.
While I do love salads for lunch, sometimes it’s nice to switch it up and I’m not one to spit in a leftover horse’s mouth.
Anyway, so what I did was toss together leftover noodles, a bunch of veggies and a quick peanut sauce.
1 tablespoon peanut butter
1 tablespoon soy sauce
1 teaspoon Sriracha (optional if you can’t take the heat)
a splash of water, unfiltered from the faucet, like a daredevil
Stir it together, pour it on your pasta mixture, shake it up in some tupperware, and you’re good to go.
Look, I know I throw some crazy things together before work, but at least I didn’t turn on the oven this time.
